Preparing Arvi Potatoes Cruchies

Arvi Potatoes Crunchies

Ingredients to prepare :

6 Large Potatoes

For the filling :

250g arvi, 10-15 roasted cashewnuts, chopped, 1tsp chilli powder, ½ tsp aniseeds (sauf), ½ tsp cumin powder, ½ tsp garam masala powder, ½ tsp amchur powder, salt to taste, 1 tsp butter.

For the sauce :

2 cups curd, 2 onions, ground to a paste, a handful of coriander leaves, chopped, 1 ½ tsp sugar, ½ tsp cumin powder, ½ tsp degi mirch powder, ½ tsp chili powder, salt, 1 tbsp butter.

Peel the potatoes and cut them into half. Parboil in salt water. Scoop out the centre and save the scooped portion for the filling. Sprinkle salt over the scooped out potatoes and keep the scooped side facing down to drain out the water.

To prepare the filling :

Boil the arvi in salt water. Peel and dice it. Heat butter in a frying pan. Season it with aniseeds. Add the arvi and fry till golden brown. Add the rest of the seasoning and cook for 10 minutes. Allow it to cool.

Glaze the basket with butter, and generously stuff them with the arvi filling. Top with the chopped cashew nuts. Pre-heat the oven for 10 minutes and baskets on medium heat for 15 minutes or till brown.

To prepare the sauce :

Heat butter in a frying pan and add the onion paste. Fry till golden brown. Add the remaining ingredients, except coriander leaves. Keep stirring till the mixture is thick and reduced to half the quantity. Add coriander leaves and child. Serve the potato baskets with chilled sauce.
